8 raw King prawns
2 tablespoons fresh tarragon, chopped
3 fresh mangoes, cut in slices
1 tablespoon lemon juice
1 tablespoon soy sauce
2 tablespoons coriander, chopped
2 endives, roughly chopped
Salt and pepper
1. Marinate the prawns in olive oil, tarragon, salt and pepper for at least one hour, overnight is best.
2. Sauté the prawns in olive oil and butter until they are pink in colour. Once cooked remove and place to one side. In the same pan, sauté the mango in butter until the slices are caramelised.
3. For the sauce, mix together 2 tablespoons of oil with the lemon juice and soy sauce.
4. Serve the prawns with the mango, endives and coriander and drizzle over the sauce.
