I work on the ingredients and look at what is in season. I get inspired by walking along the fresh food markets by the river in Lyon.
What influences your cooking?
A big influence is classic French cooking and the knowledge I developed from culinary school. Also, the people I’m lucky to work with continue to inspire me.
What have you learnt from Christian Têtedoie?
Confidence.
What can people expect to learn from your Cooking Classes?
To learn the different ways to approach cooking and making simple but great dishes. People will learn the technical and gastronomic side to cooking. The classes are informal, I like to have a relaxed atmosphere when I’m teaching.

Why do you think Lyon is the food capital of France?
Mainly it is because the legendary masterchef, Paul Bocuse, is from Lyon. He has inspired many chefs, including myself. The top restaurants, the world famous chefs and the Sirha (Worldwide Food Event hosted in Lyon) are a few reasons why this city is the food capital of France.
